About Michelle's Chocolate Lab
Michelle’s Chocolate Laboratory (MCL) is Birmingham’s premiere chocolate candy, confections and patisseries pop up shop. MCL helps Birmingham Metro and Central AL get their chocolate fix by many means: concessions (farmers markets), catering, wholesale, corporate clients, and chocolate classes. Our products are made to order in small batches to ensure you have the freshest product possible. We import one of the finest Belgian chocolate Callebaut to make our chocolate truffles, candy bars, as well as our brownies.
Well, the definition of a laboratory is a facility where you research, test, analysis, and observe data. At MCL we research, test, and analyze how people react, interact with, and LOVE chocolate. We also believe that working with chocolate, in humid Alabama you must be part “mad” and “part scientist”.
Who We Are
MCL is the brainchild of mad scientist Michelle Boykins. A graduate of The Culinary Institute of America Hyde Park, NY. With over 25 years of experience in the industry, Michelle has honed her skills in many facets of the business from sales, marketing, catering, and event planning. We now incorporate chocolate into every one of the many facets that we love.
